It’s time for some coconut pudding

I have had so many firsts writing this column: first rice pudding, first divinity, first toffee, first buttermilk, chess and blueberry pies.

Fill a baked pie crust with it, chill, cover with meringue or whipped cream, and you have a coconut cream pie!

Mix the dry ingredients together in a large sauce pan.

Add this mixture gradually to the dry ingredients, stirring constantly.

Remove from heat; add the butter, then the vanilla and finally stir in the coconut.

Top with toasted shredded coconut and sliced almonds if desired. …read more
