Cajun Mashed Potatoes

4 medium russet potatoes, peeled and cut into chunks
4 tablespoons butter
1/2 cup milk
1 teaspoon sugar
1/2 cup roasted red peppers (in a jar) drained and diced
1/2 teaspoon Cajun spice mix
1 tablespoon fresh thyme, chopped
Place potatoes in a large pot, cover with water, bring to a boil for about 15 minutes or until fork tender. Drain.
Using a ricer, potato masher or electric mixer, mash the potatoes until smooth. Add butter, mix until the butter is melted. Add the remaining ingredients, mixing well. Serve immediately. …read more
